Lightweight Defender Config for VDI (Instant Clone) Environment

Our organization has a VDI environment (close to 10,000 sessions) with VMware Horizon non-persistent instant clones. Our thin clients are set up as kiosks and every time a user logs off, it wipes the VM and spins up a fresh one. Typically, no VMs are alive for more than a day or two. We recently shifted to Windows Defender for our VDI environment but are struggling to tweak the settings in a way that doesn't bog down the environment. We've had a few instances where all the VMs in a particular pool will attempt a quick scan all at once, bogging down our VSAN shared storage and giving all the VM
