In the days that most applications were not compatible with TS, you often had memory leaks (caused by applications which didn't return used memory to the system on exit). That was the main cause for regular reboots. Nowadays, most appliactions are a bit better and this doesn't occur as often. But it's still not uncommon. So if you have a memory leak (inspect available memory during a week or so, when no users are on the system), then by all means reboot the server once a week. The only reason to reboot a server is if there is a problem or you are experiencing something like a memory leak. Earlier versions, for example, of Citrix MetaFrame required regular reboots. I know of admins who rebooted every night...
