windows 11 In old versions of Windows i was able to change the default background window colour to something other than white. How do i do this now?

I am Dyslexic and as a result i struggle with black text on a white background. The words move around like watching a rolling sea. On old windows I was able to go into the settings and select the colour for the window specifically (not the title bar, not the start menu but specifically the window colour) since windows 10 I have not been able to do this. Yes i can use high contrast mode but this doesn't give the same flexibility and actually makes somethings impossible to use as well as seems to affect system performance with increased crashes load times to the extent I just gave up.
