My PC reverted to Windows 8.1 from Windows 11 after an update

My PC was running Windows 11 until last month but ?after an update it restarted and now uses Windows 8.1. That was a month ago and I have only just been able to gain administrator privileges as the PC was built by my son who has since forgotten his admin password. I thought I would try uninstalling the last Windows update dated 29 September 2024, but that has made no difference. No restore points are available before 13 October. So I am now stuck in Windows 8.1 despite having upgraded from there to Windows 10 and then from 10 to Windows 11 at the proper times, so I did not have to pay. I stil
