Date accessed randomly changes in my files (Word, pdf,mp3)

I noticed that the date accessed in my files (Word, pdf etc) randomly changes even when I don't open the file, don't copy, don't move, nothing. For example it shows accessed today 30 min ago, but I know I didnt open it for a week. It happens to almost all the files on my desktop. Why is this happening?
