iPhone unlocked, but still shows verizon # in cellular and phone calls default to verizon # i don't use anymore. how to clear it to use new service

Hi so verizon unlocked my phoen after paying it off, but in the cellular settings, it still lists my old verizon # which i no longer have. How can i get rid of it so phone calls don't default to that (leading to an annoying popup to try the next eSIM)?? do i have to wipe the phoen completely and start over? that would be annoying. what if i just delete network settings, will that get rid of the verizon #/SIM (not sure if it's a physical or eSIM).
