Frustrated with sound/haptic settings. Please help

I recently upgraded from and iPhone 11 to a 14 and I can’t get my settings to match how my 11 worked.

 

Here’s what I’d like,

 

-iPhone and watch to vibrate when a notification is received.

 

-alarm volume to be on and higher. (It was super quiet this morning)

 

-side buttons to adjust media volume only for videos.

 

I’ve been messing with settings and googling for 3 days and every time I fix something, it messes up something else.
