Question re: iCloud backup & 3rd party apps

Does anyone know How privacy s affected (if at all) by enabling/disabling specific/all 3rd party apps to backup to iCloud?

 

I'm asking to prevent me from jacking up my phone going down the never ending Apple support & privacy rabbit-hole that I tend to- Every time I research or read an article related to "trackers/beacons and companies who sell my info, I end up unable to use a site/service as I did before. Clearly, I'm not savvy enough to remember all or what setting I updated or the effect it may have later on a different app I use... If you have an educated opinion/answer on the benefits to me to backup, most used 3rd party apps or even cons - please educate & share with me. use an app/site/se
