I upgraded my CPU and reinstalled Windows 10. Then, without asking me, a Windows 11 install began. How can I stop it?

I upgraded my CPU and reinstalled Windows 10. Then, without asking me, a Windows 11 install began. My devices aren't supported by Windows 11. How can I stop the install - I have delayed it, but am almost out of time. The descriptions on the internet turn off all updates, including ones to Windows 10.
