File and Folder sharing - Windows Server 2022 - What am I doing wrong?

Just built out a new Win 2022 Server for the first time in a long time and my file/folder sharing and permissions setup is a tad rusty.

 

I have a main data drive on the server that will have about 10 standard shares. This is a small business scenario - with about dozen employees in a simple workgroup and standard groups etc.

 

My first question is an odd one - that I clearly have not read enough about (or forgot about :).

 

When logged into this new server as WSA (windows server admin) and I create a simple folder (to eventually share) out on this new data drive - when I check Security - I am seeing my own WSA account listed in amongst the default groups AND the WSA account automatically becomes the “owner” of this folder as well:

Conversely - if I do the same on this Windows 10 workstation I am on typing this - and add a folder on the C drive - I get what I believe are more “generic” permissions like so:

While I am still stamped as the owner of this new folder - my personal Windows account is NOT added to the permission entries (I am part of the Admin group) so the default groups assigned here require little to no fixing after the fact.

 

My concerns is if I have to create 10 or 15 shares on this new server data drive and have to manually clean up each of them every time - this could get very time consuming.

 

What I am doing wrong here? Is it the Inheritance that is wreaking havoc? I am confused as to why Server of all things would not simply make the Administrators group - the “owner” for all new shares and assign the basic groups (System, Admins and Users) as the default positions right off the start and then I could make specific share changes as needed.

 

Just feel like something is not right here to start with and I want to self correct before making a pile of shares that are more work than they are worth.
