I can't do a backup of myfiles to a portable drive because I have one One Drive but don't want to use it,

I backed up some files to One Drive about a year ago but preferred to back up important docs, pictures and other stuff to a thumb drive every couple of months. I also have some data from my old PC that is on this PC that I wish to backup. I have a portable 1TB hard drive to use and although it is visible as a portable drive in file exploer I can't find a way to back up to it. I could always do this in Windows 10 but a lot of the choices I had then seem to be invisible in Windows 11. It seems to be stuck on One Drive. Please show me how to do this backup.
