exchange server 2019 hybrid mode storage question.

we have an exchange server 2019 running as a hybrid server with 365. all of our users have been migrated to 365 and we are currently looking to stop routing mail through exchange server and send it directly to 365. but I fear we have missed something. we currently do Veeam incremental backups from exchange server and it seems to backup about 10 gigs of new data every day but the drives aren't filling up so where is this data coming from/ what is it and do I need to worry about it.
