When R2 was first brought out you could download the R2 pack and install it - with the appropriate license key of course. If you have the Windows 2003 R2 CD, just stick CD2 in and run the install. Basically, the reason why i want to use R2 cause i just need to have the "File Server Resource Manager" to apply quotas (size restriction) to folders in one of the server.
