Switch to Windows 7 from Windows 8?

Is it possible to switch to Windows 7 from Windows 8?  Windows 8 is extremely difficult to use with my non-touch screen laptop.   I am having trouble with some of the most basic functionalities, such as Printing, Saving, Navigation between applications.

 Here are some of my difficulties:

1.  It seems to default to full-screen for all applications, so I couldn't work with multiple applications at once.

2.  It's difficult to bring up the toolbar for Printing, Save, Attachment, etc.. It despairs and shows-up randomly.
