Black pudding or (less often) blood pudding is an English term for sausage made by cooking blood with a filler until it is thick enough to congeal when cooled. It is also called blood sausage (first attested in 1868, perhaps influenced by German Blutwurst). Although "blood sausage" is often labeled as a North American term, it is also found in English (e.g., in the story "The Name-Day" by Saki). "Blood sausage" is also a useful term for similar blood-based solid foods around the world. Pig or cattle blood is most often used; sheep and goat blood are used to a lesser extent. Blood from poultry, horses and other animals are used more rarely. Typical fillers include meat, fat, suet, bread, sweet potato, barley and oatmeal. Enough to make you puke? Trust me it's gorgeous. Gotta have them for a proper English breakfast surely? :) Oh gracious, that black pudding brings back memories of my sitting at the table for hours until I ate every bit of it from my plate - eek! Actually used to like it until seeing it made (ugh and eek!) - and now it's right up there with head-cheese and haggis - huge laugh! Goku, what is the breakfast please? I recognize the pan bread, I think ... since we moved a few months ago, I can only dream of our favourite restaurant that served traditional East Indian food - loved it! (To show you how much I miss it - the gentleman who built our house immigrated here from India and I was tempted to beg him to take us home for a meal - huge smile!). Quote

Mara Posted January 17, 2009 Posted January 17, 2009 Oh dear, I am literally laughing aloud as I'm afraid it is pretty gross! My mother used to have the largest pot humanly possible .. and into it went the washed head (yes, head of the pig) and often the feet too (without the actual hooves) with enough water to just cover it. It was brought to a boil and then simmered for hours ... with subsequent 'scum' floating on top of the water and a very distinctive smell that used to make me want to run for cover!! Then the mess would get drained and she'd pick through that gross stuff for the 'meat' ... mix it with spices and some other stuff ... and then press it into molds similar to bread pans. And yup, when it cooled, there'd be a coating of congealed fat coating the entire thing. It was chilled and sliced and served as luncheon meat - or dod forbid to a kid, fried and served as a treat for dinner. Feel free to gag, Wolfeymole, I surely used to! Quote

Goku Posted January 18, 2009 Posted January 18, 2009 Well, basically the meal consists of a Roti, Chila, Chhole and Dal. A Roti is something similar to a tortilla. It is made from dough and is eaten with most vegetables and Dal. It is quite tasteless if eaten alone but nutritious all the same. Chila is another type of tortilla made from the dough of chickpea. The chickpea dough is made by powdering the chickpeas and then adding water to it. It can be eaten alone or with sauce or chutney as the diner prefers. Chhole is a vegetable delicacy and is one of the most delicious dishes there is. It is very spicy and a personal favourite of mine. Dal is some sort of water that is saturated in leguminous beans. It is usually accompanied by a Roti or two. There are a wide varieties of Dal and vegetable delicacies available and trust me, they are all worth eating. Some of the simpler ones can be prepared at home too so I will post the recipe if anyone is in the mood of experimenting. :) -- Goku Quote

Darn near brought me to tears just seeing the word and remembering thinking (and still believing) that cow tummy linings would simply never ever pass my lips again if I ever lived long enough to become an adult! (And I had my serious doubts after eating so much of the 'traditional English food' as a kid - huge laugh!). Of course, my poor husband still has nightmares about the 'Spam' in a can that his mother used to serve them when he was a kid. I escaped that but how bad can it be compared to some of these other culinary 'delights'! :) Quote

Now a dirty word on the internet LOL, but it is quite a reasonable canned food and also, the what I consider the the British equivalent, corned beef. great in a sandwich with salad, or sliced and fried with a breakfast etc. Those sausages do look great Polo, however we do get an equivalent up here in both Lancashire and Yorkshire, that being the traditional Cumberland sausage.
